What is the production process of cocoa paste?

Taking cocoa paste production as an example, the process is: cocoa bean feeding → roasting → cocoa bean peeling → grinding → storage.

Feeding: Z-type Elevator

The Z-type elevator smoothly lifts cocoa beans from the hopper into the roasting machine. This function greatly reduces labor, frees up the workforce, and ensures continuous production.

Roasting: Chain Plate Roaster or Drum Roaster

For large cocoa paste production lines, a chain plate roaster is generally used. It can roast cocoa beans continuously while conveying them, ensuring even heating, high efficiency, and suitability for other materials such as nuts, sunflower seeds, and peanuts.

A drum roaster is typically used for semi-automatic, small-scale cocoa paste production lines. It uses a rotating drum heating method combined with hot air circulation and mechanical tumbling to ensure the cocoa beans are evenly heated and roasted.

Cocoa Bean Peeling: Peeling Machine

After roasting, the cocoa beans enter the hopper for even feeding. Peeling is achieved through rollers that rub off the shells. A fan extracts the removed shells and discharges them through the bottom of a cyclone separator. The peeled cocoa nibs are discharged from the outlet. By adjusting the airflow and peeling gap, effective separation of shells and nibs can be achieved.

The machine features a vibrating sieve structure that grades the peeled nibs and residual shell fragments, further removing impurities and ensuring thorough separation. Any cocoa beans not fully peeled are detected and returned to the hopper via a series of blue pipes for a second peeling, ensuring a high peeling rate and minimizing raw material waste.

Grinding: Cocoa Bean Grinder

The cocoa bean grinder is equipment designed for fine processing of wet materials. Its working principle involves specially shaped teeth on the rotor and stator that interact at high speed. Under the effects of gravity and centrifugal force, cocoa beans pass through the adjustable gap between the rotor and stator, undergoing intense shearing, friction, and vibration to achieve dispersion, crushing, emulsification, homogenization, and mixing.

The machine is made entirely of stainless steel, operates with low noise, and is easy to clean. It can grind cocoa beans to a fineness of 60–200 mesh, making it suitable for producing smooth cocoa paste.

Storage: Storage Tanks

This section consists of mixing tanks, vacuum tanks, and storage tanks.

  • In the mixing tank, cocoa paste is buffered and homogenized to ensure uniformity and prevent settling or layering. Additional ingredients can also be added and mixed here.
  • The vacuum tank removes air bubbles and part of the moisture from the cocoa paste, improving smoothness and stability.
  • The final storage tank is used for temporarily holding the processed cocoa paste, making it convenient for subsequent production or packaging.
